Nick Bossler, Reading Thermal, will discuss the technology behind the Scorpion 2 Data Logging Measurement System and how it relates to the 4-key baking parameters: temperature, air velocity, heat flux, and humidity.

Rich McFeaters, ABA’s Technical Advisor, will present on the chemical process occurring in the oven in relation to the oven profile and the time-temperature effects on products.
